The official, standalone Twitch Desktop App was completely discontinued and shut down on April 30, 2022.
Because the vast majority of users accessed the platform via web browsers, Twitch chose to retire the native application to focus its resources and engineering efforts on improving the web client and mobile apps.

If you want a dedicated window for Twitch on your desktop without browser tabs and a cluttered URL bar, you can install the site as a Progressive Web App (PWA). This works seamlessly on Windows 10, Windows 11, and macOS.
Using Google Chrome: Navigate to Twitch.tv and log in. Click the three-dot menu in the top right, hover over Cast, save and share, and select Install page as app.
Using Microsoft Edge: Go to the site, click the three-dot menu, hover over Apps, and click Install this site as an app.
